Ingredients

1/3 c. flour

3 tbsp. buttermilk or whole milk

3 tbsp. sugar

1 pinch kosher salt

1 stick unsalted butter, chilled and cut into cubes

1 egg

1/4 c. sour cream

1/4 c. sugar

2 tbsp. lemon juice

1 tsp. vanilla extract

3 c. fresh strawberries, chopped

1/4 c. flour

1 pinch kosher salt

Preparation

Step 1Preheat oven to 350º. In a bowl, combine flour, buttermilk or milk, sugar, and salt and, using your fingers, work in butter until mixture resembles coarse crumbs. (Alternatively, you can pulse this together in a food processor.)Step 2Reserve 1/4 cup of crust mixture for crumb topping. Pat mixture into a buttered 8-x-8 glass baking dish and bake until golden, 10 minutes.Step 3In a separate bowl, whisk together egg, sour cream, sugar, lemon juice, and vanilla extract until combined. Fold in strawberries, flour, and salt. Pour mixture over baked crust and top with reserved crumb topping.Step 4Bake until cooked through and top is golden and bubbly, about 1 hour.Step 5Let cool before slicing.
