Ingredients

2 cups torn fresh arugula or baby spinach3/4 cup quartered fresh strawberries1/4 cup slivered almonds1/4 cup crumbled Gorgonzola cheese2 tablespoons chopped red onion2 tablespoons olive oil1 tablespoon thawed orange juice concentrate1 tablespoon balsamic vinegar1-1/2 teaspoons grated orange zest1/8 teaspoon ground ginger

Preparation

In a salad bowl, combine the first 5 ingredients. In a small bowl, whisk the oil, orange juice concentrate, vinegar, orange zest and ginger. Pour over salad; toss gently to coat.
