Ingredients

2/3 cup chopped onion1 teaspoon minced garlic1 tablespoon butter2 packages (10 ounces each) frozen cooked winter squash, thawed2 cups chicken broth1 can (15-1/2 ounces) hominy, rinsed and drained1 teaspoon salt1/4 teaspoon pepper1/4 teaspoon each ground ginger, cinnamon and nutmeg1/4 cup heavy whipping cream

Preparation

In a large saucepan, saute onion and garlic in butter until tender. Stir in the squash, broth, hominy and seasonings. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Remove from the heat; stir in cream.
