Ingredients
8 cups torn fresh spinach1 cup sliced fresh mushrooms1/4 cup sliced green onions1 medium tomato, chopped5 bacon strips, cooked and crumbled1 hard-boiled large egg, chopped1 cup shredded Parmesan cheeseHONEY-BACON DRESSING:2 bacon strips, cooked and crumbled1/2 cup honey1/2 cup vinegar1/3 cup vegetable oil1 teaspoon yellow or spicy brown mustard1 teaspoon lemon juice
Preparation
Combine the first seven ingredients in a large bowl. In a small bowl, whisk together dressing ingredients; pour over salad. Serve immediately.
