1/2 cup apple butter3 tablespoons olive oil1 tablespoon cider vinegar1/8 teaspoon pepper6 cups fresh baby spinach1/2 cup pecan halves1/4 cup shredded Swiss cheese
Preparation
For dressing, in a jar with a tight-fitting lid, combine the apple butter, oil, vinegar and pepper; shake well. Divide spinach among 4 plates; sprinkle with pecans and cheese. Drizzle with dressing.
