Ingredients
2 packages (6 ounces each) fresh baby spinach1 medium apple, chopped1 cup crumbled feta cheese1 cup glazed pecans1/2 cup chopped red onion1/3 cup dried cranberries5 bacon strips, cooked and crumbled, optionalDRESSING:2 tablespoons cider vinegar1 tablespoon sugar1/2 teaspoon Dijon mustard1/8 teaspoon pepper1/4 cup canola oil
Preparation
In a large bowl, combine the first 6 ingredients; stir in bacon if desired.
For dressing, in a small bowl, whisk vinegar, sugar, mustard and pepper until blended. Gradually whisk in oil. Pour over salad; toss to coat.
