8 slice bacon

2 package (10-ounce) frozen chopped spinach

3/4 lb. pepper-jack cheese

1/4 tsp. salt

1/4 tsp. fresh-ground black pepper

Two 12-inch store-bought pizza shells

2 tbsp. olive oil

2 tbsp. grated Parmesan

Preparation

Step 1Heat the oven to 425°F. In a large nonstick frying pan, cook the bacon over moderate heat until crisp. Remove the bacon with a slotted spoon and drain on paper towels.Step 2In a large bowl, combine the bacon, drained spinach, pepper jack, salt, and pepper and mix well. Brush the pizza shells with the oil.
