Ingredients
1 cup cubed peeled mango1 cup cubed peeled papaya1 cup cubed peeled fresh peaches1 cup fresh blueberries1 medium ripe avocado, peeled and cubed1 cup frozen corn, thawed1/3 cup chopped dried apricots1/3 cup flaked coconut1/4 cup minced fresh cilantro1 cup corn chips, lightly crushedCHIPOTLE-COCONUT DRESSING:1/4 cup coconut milk2 tablespoons lime juice1 tablespoon cider vinegar1 chipotle pepper in adobo sauce, chopped2 garlic cloves, minced1/4 teaspoon cayenne pepper1/4 teaspoon brown sugarOptional: Additional corn chips or flaked coconut
Preparation
In a large bowl, combine the first 10 ingredients. In a small bowl, whisk the coconut milk, lime juice, vinegar, chipotle, garlic, cayenne and brown sugar. Drizzle over fruit mixture; toss to coat. Sprinkle with additional corn chips or coconut if desired. Serve immediately.
