Ingredients

1 cup all-purpose flour1 cup cornmeal3 tablespoons sugar3 teaspoons baking powder1/4 teaspoon salt3/4 cup chunky salsa1/2 cup half-and-half cream6 tablespoons butter, melted1 large egg, lightly beaten

Preparation

In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In another bowl, combine the salsa, cream, butter and egg. Stir into dry ingredients just until moistened.

Fill greased muffin cups three-fourths full. Bake at 400° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
