Ingredients

1 small onion, chopped1 jalapeno pepper, seeded and chopped1 garlic clove, minced2 teaspoons vegetable oil1 can (16 ounces) refried beans2 tablespoons water1 teaspoon hot pepper sauce1/4 teaspoon ground cumin1/4 teaspoon chili powder1/8 teaspoon cayenne pepper1/2 cup shredded Monterey Jack cheese

Preparation

In a large skillet, saute the onion, jalapeno and garlic in oil for 2-3 minutes or until tender. Stir in the beans, water, hot pepper sauce, cumin, chili powder and cayenne. Cook and stir over medium-low heat until heated through. Transfer to a serving bowl; sprinkle with cheese.
