Ingredients

1-1/2 cups all-purpose flour2 teaspoons baking powder1-1/4 teaspoons salt3/4 teaspoon chili powder1/2 teaspoon onion powder1/4 teaspoon crushed red pepper flakes2 large eggs, room temperature1 can (15 ounces) pumpkin1/2 cup 2% milk2 tablespoons butter, meltedOil for deep-fat fryingChipotle mayonnaise, optional

Preparation

In a large bowl, whisk the first 6 ingredients. In another bowl, whisk eggs, pumpkin, milk and melted butter until blended. Add to dry ingredients, stirring just until moistened.

In a deep cast-iron skillet or deep-fat fryer, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry each side until golden brown, 1-1/2 to 2 minutes. Drain on paper towels. Serve warm. If desired, serve with chipotle mayonnaise.
