Ingredients

2-1/2 cups fresh or frozen corn, cooked1 can (15 ounces) black beans, rinsed and drained3/4 to 1 cup chopped seeded anaheim chili peppers1/8 to 1/4 cup chopped seeded jalapeno peppers1/4 cup vinegar2 tablespoons vegetable oil1 tablespoon Dijon mustard1 teaspoon chili powder1 teaspoon ground cumin3/4 teaspoon salt1/2 teaspoon pepper

Preparation

In a large bowl, combine corn, beans and peppers. Combine remaining ingredients in a small bowl; pour over corn mixture and toss to coat. Chill.
