Ingredients
4 cups chicken broth2 cups cubed cooked chicken2 celery ribs, chopped2 medium carrots, chopped1 medium green pepper, chopped1 medium onion, chopped1/3 cup uncooked long grain rice1/4 cup minced fresh cilantro1/2 teaspoon dried oregano1/2 teaspoon salt, optional1/2 teaspoon pepper1/4 teaspoon ground cumin1/8 to 1/4 teaspoon crushed red pepper flakes
Preparation
In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until rice and vegetables are tender.
