Ingredients

1 pound potatoes (about 2 medium), peeled and cubed1 pound medium sweet potatoes (about 2 medium), peeled and cubed2 medium carrots, sliced2 medium fresh beets, peeled and cubed2 cartons (32 ounces each) vegetable broth2 cups dried lentils, rinsed2 teaspoons paprika1 teaspoon ground nutmeg1 teaspoon ground cinnamon1/2 teaspoon ground cardamom1/2 teaspoon ground allspice2 cups coconut milk

Preparation

In a 6-qt. slow cooker, combine the first 11 ingredients. Cook, covered, on low 5-6 hours or until vegetables and lentils are tender. Stir in coconut milk.
