Ingredients
10 cups peeled and cubed sweet potatoes (about 6 potatoes)1/2 cup heavy whipping cream1/2 cup orange juice1 tablespoon brown sugar1 teaspoon grated orange zest1/2 teaspoon ground cinnamon1/4 teaspoon salt1/4 teaspoon ground nutmeg
Preparation
Place sweet potatoes in a large Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Meanwhile, in a small saucepan, heat remaining ingredients until bubbles form around side of pan; remove from heat.
Drain potatoes; return to pan. Mash potatoes, gradually adding cream mixture.
