Ingredients

5 cups chopped peeled tart apples3 cups chopped fresh apricots1 cup chopped red onion1 cup golden raisins1 cup cider vinegar1/2 cup packed brown sugar1/2 cup apple cider or juice1 tablespoon minced fresh gingerroot2 teaspoons ground cinnamon1/2 teaspoon salt1/2 teaspoon ground allspice1/2 teaspoon ground cardamom1/2 teaspoon grated lemon zest1/4 teaspoon pepper

Preparation

In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 minutes.

Uncover; simmer 35-45 minutes longer or until mixture reaches desired consistency, stirring occasionally. Transfer to a bowl; cool. Serve at room temperature or chilled. Cover and store in the refrigerator for up to 2 weeks.
