Ingredients

6 cups fresh baby spinach1 head radicchio, torn2 cups fresh raspberries1/2 cup raisins1/4 cup pine nuts, toasted1/4 cup thinly sliced red onion1/4 cup minced fresh mint3 tablespoons lime juice2 tablespoons olive oil2 teaspoons honey1-1/2 to 3 teaspoons chopped chipotle pepper in adobo sauce1/4 teaspoon salt1/2 cup crumbled feta cheese

Preparation

In a large salad bowl, combine the first 7 ingredients. In a small saucepan over medium heat, combine lime juice, oil, honey, chipotle pepper and salt. Cook and stir until blended and heated through. Immediately pour over salad; toss to coat. Sprinkle with cheese.
