Ingredients

1/2 cup chopped green pepper1/3 cup chopped celery1/4 cup chopped onion1 tablespoon canola oil1 pound fully cooked smoked sausage, sliced2 cups water1 can (10 ounces) diced tomatoes and green chilies, undrained1 package (6.8 ounces) Spanish rice and pasta mix1/4 cup sliced pimiento-stuffed olives1/8 teaspoon pepper

Preparation

In a large skillet, saute the green pepper, celery and onion in oil until tender. Stir in the remaining ingredients. Cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed, stirring occasionally.
