Ingredients

1 pound ground beef1 cup chopped onion1/2 cup chopped green pepper1 garlic clove, minced1 tablespoon chili powder1 bottle (32 ounces) tomato or vegetable juice1 cup uncooked long grain rice1/2 teaspoon salt

Preparation

In a skillet, cook beef over medium heat until no longer pink; crumble meat; drain. Stir in the onion, green pepper, garlic and chili powder. Cook and stir until the vegetables are tender. Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until the rice is tender and most of the liquid is absorbed.
