Ingredients

1/4 cup butter, cubed2 cups uncooked instant rice1 can (14-1/2 ounces) diced tomatoes, undrained1 cup boiling water2 beef bouillon cubes1 medium onion, chopped1 garlic clove, minced1 bay leaf1 teaspoon sugar1 teaspoon salt1/4 teaspoon pepper

Preparation

In a saucepan, melt butter over medium heat. Add rice; cook and stir until lightly browned. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer until the liquid is absorbed and rice is tender, 10-15 minutes. Remove bay leaf before serving.
