Ingredients
1 package (5 ounces) spring mix salad greens1 large tomato, seeded and chopped1 large red onion, chopped1 medium ripe avocado, peeled and chopped1 cup canned black beans, rinsed and drained4 green onions, chopped1/2 cup shredded reduced-fat cheddar cheese1/2 cup minced fresh cilantroDRESSING:1/2 cup salsa verde1/2 cup fat-free plain Greek yogurt2 tablespoons minced fresh cilantro1 tablespoon thinly sliced green onion1 tablespoon lemon juice1 tablespoon white wine vinegar1 tablespoon olive oil1-1/2 teaspoons honey1/8 teaspoon pepper
Preparation
In a large bowl, combine the first eight ingredients. In a small bowl, whisk the remaining ingredients. Pour over salad mixture; toss to coat. Serve immediately.
