Ingredients

1 cup water1/2 cup frozen corn, thawed1/2 cup chopped sweet orange pepper1/2 cup black beans, rinsed and drained1 can (4 ounces) chopped green chiles2 tablespoons butter1 garlic clove, minced1/4 teaspoon salt1/4 teaspoon ground cumin1/8 teaspoon ground turmeric1 cup uncooked instant rice

Preparation

In a large saucepan, combine the first 10 ingredients; bring to a boil. Stir in rice. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork.
