Ingredients

3 cups coleslaw mix1/2 cup shredded cheddar cheese1/4 cup canned Mexicorn1 jalapeno pepper, seeded and chopped2 tablespoons chopped red onion1 tablespoon minced fresh cilantro1/2 cup ranch salad dressing1-1/2 teaspoons lime juice1/2 teaspoon ground cumin

Preparation

In a large bowl, combine the first six ingredients. In a small bowl, whisk the salad dressing, lime juice and cumin. Pour over coleslaw; toss to coat. Refrigerate until serving.
