3 cups all-purpose flour1/2 cup sugar2 teaspoons baking powder1/2 teaspoon salt1 large egg, beaten1 cup whole milk1/4 cup orange juice1/4 cup butter, melted1 teaspoon vanilla extract1 teaspoon grated orange zest1 cup grated unpeeled applesOil for deep-fat fryingConfectioners’ sugar
Preparation
In a large bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk, orange juice, butter, vanilla and orange zest; add to dry ingredients just until moistened. Fold in the apples.
In an electric skillet or deep fryer, heat oil to 375°. Drop batter by rounded tablespoonfuls, a few at a time, into hot oil. Fry until golden brown, about 1-2 minutes on each side. Drain on paper towels. Dust with confectioners’ sugar.
