2 c. unsifted all-purpose flour plus more for rolling out the dough
1 tsp. salt
3/4 tsp. baking powder
1/2 tsp. sugar
1/2 c. warm water
2 tbsp. vegetable oil plus more for frying
2 tbsp. milk
Warmed honey (optional)
Ground cinnamon (optional)
Fine sea salt (optional)
Preparation
Step 1Mix the flour, salt, baking powder, and sugar in a medium bowl. Stir in the water, 2 tablespoons oil, and the milk with a wooden spoon, mixing until a dough forms. Turn out the dough onto a lightly floured surface and knead until smooth, about 3 minutes. Cover dough with a bowl and let rest 15 minutes.Step 2Heat 2 inches vegetable oil in a deep large saucepan over medium-high heat until the oil registers 375 degrees on a deep-fat thermometer. Divide the dough into 8 equal pieces and roll each out on a lightly floured surface to a 5-inch round. Fry the sopaipillas, two at a time, until puffed and golden, about 30 seconds. Turn each over and fry until golden. Drain on paper towels. While hot, drizzle with honey or sprinkle with cinnamon or salt.
