Ingredients

1/2 cup butter, softened1 cup packed brown sugar1 large egg, room temperature1-3/4 cups all-purpose flour2 teaspoons baking powder3/4 teaspoon ground cinnamon1/2 teaspoon salt1/4 teaspoon ground nutmeg1/8 teaspoon ground cloves1/4 cup 2% milk1-1/2 cups grated zucchini, squeezed dry1/2 cup chopped walnuts1/2 cup raisins1 teaspoon grated orange zest

Preparation

In a bowl, cream the butter and brown sugar until light and fluffy, 5-7 minutes. Add the egg and mix well. Combine dry ingredients; add alternately with milk to creamed mixture. Stir in zucchini, walnuts, raisins and orange zest. Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 12-14 minutes or until edges are lightly browned and cookies are set.
