Ingredients
1 jar (12 ounces) peanut butter1/2 cup butter, softened1 cup plus 2 tablespoons packed brown sugar1 cup sugar3 large eggs, room temperature2 teaspoons baking soda3/4 teaspoon vanilla extract3/4 teaspoon corn syrup4-1/2 cups quick-cooking oats1 cup miniature semisweet chocolate chips1/2 cup English toffee bits or almond brickle chips
Preparation
Preheat oven to 350°. In a large bowl, cream peanut butter, butter and sugars until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in baking soda, vanilla and corn syrup. Stir in oats, chips and toffee bits.
Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake until lightly browned, 10-12 minutes. Cool 1 minute before removing from pans to wire racks.
