Ingredients
2 cups tomato juice4 medium tomatoes, peeled and finely chopped1/2 cup chopped seeded peeled cucumber1/3 cup finely chopped onion1/4 cup olive oil1/4 cup cider vinegar1 teaspoon sugar1 garlic clove, minced1/4 teaspoon salt1/4 teaspoon pepper
Preparation
In a large bowl, combine all ingredients. Cover and refrigerate until chilled, at least 4 hours.
