Ingredients

1 pound fully cooked smoked turkey sausage, cut into 1/2-inch slices2 tablespoons olive oil1/2 cup julienned green pepper1/2 cup julienned sweet red pepper1 small onion, sliced and separated into rings1-1/2 teaspoons garlic powder1-1/2 teaspoons dried basil1-1/2 teaspoons dried oregano1/4 teaspoon pepper2 medium tomatoes, cut into wedges4 cups hot cooked rice

Preparation

In a nonstick skillet or wok, stir-fry sausage in oil over medium heat until lightly browned, about 10 minutes. Add the peppers, onion and seasonings. Cover and cook for 10 minutes or until the vegetables are crisp-tender, stirring occasionally. Add the tomatoes; cook 1 minute longer. Serve over rice.
