Ingredients

1/2 pound smoked sausage, sliced1/3 cup chopped green pepper1/4 cup chopped onion1/2 teaspoon dried oregano1/2 teaspoon dried basil1 tablespoon olive oil1 small garlic clove, minced3/4 cup V8 juice1-1/2 cups hot cooked rice Minced fresh oregano, optional

Preparation

In a large skillet, saute the sausage, green pepper, onion, oregano and basil in oil until vegetables are crisp-tender. Add garlic; cook 1 minute longer.

Stir in V8 juice; bring to a boil. Reduce heat; simmer, uncovered, until thickened and heated through, 7-8 minutes, stirring occasionally. Serve with rice. If desired, garnish with fresh oregano.
