Ingredients
1-1/4 cups all-purpose flour, divided2 tablespoons sugar1 teaspoon baking powder1/4 teaspoon ground cinnamon1/8 teaspoon salt1 large egg, room temperature1/4 cup 2% milk, warmed2 tablespoons butter, melted6 cups sliced peeled fresh peaches (about 6 large)2 tablespoons brown sugar1 tablespoon lemon juice1 tablespoon vanilla extractVanilla ice cream, optional
Preparation
Whisk together 1 cup flour, sugar, baking powder, cinnamon and salt. In another bowl, whisk together egg, milk and melted butter. Add to dry ingredients, stirring just until moistened (batter will be thick). Spread onto bottom of a greased 5-qt. slow cooker.
Combine peaches, the remaining 1/4 cup flour, brown sugar, lemon juice and vanilla; spoon over batter. Cook, covered, on high until peach mixture is bubbly, 1-3/4-2 hours. If desired, serve with vanilla ice cream.
