Ingredients

1 large egg, beaten1/3 cup taco sauce1 cup coarsely crushed corn chips1/3 cup shredded Mexican cheese blend or cheddar cheese2 tablespoons taco seasoning1/2 teaspoon salt, optional2 pounds lean ground beef (90% lean)Additional taco sauce or salsa

Preparation

In a large bowl, combine the first 5 ingredients and, if desired, salt. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in a 3-qt. slow cooker. Cover and cook on low until a thermometer reads 160°, 6-8 hours. Serve with taco sauce or salsa.
