4 medium ears sweet corn, cut into 2-inch pieces1 can (15 ounces) coconut milk1 medium onion, chopped1/4 cup butter, cubed6 fresh thyme sprigs 2 garlic cloves, minced1 bay leaf3/4 teaspoon salt1/4 teaspoon pepper1/4 cup fresh cilantro leaves, chopped2 green onions, sliced
Preparation
In a 5- or 6-qt. slow cooker, combine first 9 ingredients. Cook, covered, on high 2-3 hours or until tender. Serve with cilantro and green onions.
