Ingredients

6 hard-boiled large eggs3 tablespoons mayonnaise2 tablespoons crumbled blue cheese1 tablespoon finely chopped celery1 teaspoon Louisiana-style hot sauce1/8 teaspoon salt1/8 teaspoon pepperCelery leaves, optional

Preparation

Cut eggs in half lengthwise. Remove yolks; set aside egg whites and 4 yolks (discard remaining yolks or save for another use).

In a large bowl, mash reserved yolks. Stir in mayonnaise, blue cheese, celery, hot sauce, salt and pepper. Stuff or pipe into egg whites. If desired, garnish with extra celery, crumbled blue cheese, and hot sauce. Chill until serving.
