Ingredients

1/2 cup chopped green pepper1 medium tomato, peeled, seeded and diced1/4 cup finely chopped onion1 tablespoon vegetable oil1/2 cup uncooked long grain rice1 cup chicken broth1/2 teaspoon salt, optional1/4 teaspoon pepper

Preparation

In a saucepan, saute green pepper, tomato and onion in oil until tender. Add rice; cook and stir for 2 minutes. Stir in broth, salt if desired and pepper; bring to a boil. Reduce heat; cover and simmer 25 minutes or until rice is tender.
