Ingredients
1/2 cup all-purpose flour1/2 cup quick-cooking oats1-1/2 teaspoons sugar1 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon salt1 large egg, room temperature3/4 cup buttermilk1/2 cup cinnamon applesauce2 tablespoons butter, meltedMaple syrup or topping of your choice
Preparation
In a large bowl, combine the dry ingredients. In a small bowl, beat the egg, buttermilk, applesauce and butter; stir into dry ingredients just until moistened.
Pour batter by 2 tablespoonfuls onto a greased hot griddle; turn when bubbles form on top. Cook until second side is golden brown. Serve with syrup.
