Ingredients
6 ounces uncooked linguine1 pound uncooked medium shrimp, peeled and deveined1/2 cup chopped onion1 garlic clove, minced1 tablespoon olive oil3 cups sliced plum tomatoes1/2 cup white wine or reduced-sodium chicken broth1 tablespoon tomato paste1 teaspoon dried oregano1/2 teaspoon salt1/4 teaspoon crushed red pepper flakes1/4 cup crumbled feta cheese2 tablespoons minced fresh parsley
Preparation
Cook linguine according to package directions. Meanwhile, in a large nonstick skillet, saute the shrimp, onion and garlic in oil for 3-5 minutes or until shrimp turn pink.
Add the tomatoes, wine or broth, tomato paste, oregano, salt and pepper flakes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain linguine; top with shrimp mixture. Sprinkle with feta cheese and parsley.
