Ingredients

1/2 medium zucchini, halved lengthwise and cut into 1/4-in. slices1 cup fresh sliced Brussels sprouts1 shallot, sliced1/4 teaspoon salt1/4 teaspoon pepper2 tablespoons olive oil1 large sweet yellow pepper, cut into 4 rings4 large eggs1/4 cup shredded Parmesan cheese

Preparation

Preheat oven to 350°. Place first 5 ingredients in a large bowl. Drizzle with oil; toss to coat. Place pepper rings on a baking sheet. Arrange vegetable mixture around peppers. Bake for 12 minutes.

Break and slip an egg into center of each pepper ring; sprinkle with Parmesan. Bake until whites are set and yolks begin to thicken, 8-10 minutes.
