2 tablespoons rice vinegar4 teaspoons soy sauce1 tablespoon olive oil2 teaspoons minced fresh gingerroot2 teaspoons sesame oil1 teaspoon honey1/4 teaspoon Sriracha chili sauce2 English cucumbers1 teaspoon sesame seeds, toastedThinly sliced green onions
Preparation
For dressing, mix first 7 ingredients. Trim ends and cut cucumbers crosswise into 3-in. sections. Cut sections into julienned strips.
To serve, toss cucumbers with sesame seeds and dressing. Sprinkle with green onions.
