Ingredients
1/3 cup fat-free mayonnaise1 tablespoon reduced-sodium soy sauce1/8 teaspoon ground ginger1-1/3 cups cubed cooked chicken breast1/2 cup chopped fresh snow peas1 small sweet red pepper, chopped1 tablespoon sesame seeds, toasted4 lettuce leaves1 tablespoon chopped cashews
Preparation
In a small bowl, combine the mayonnaise, soy sauce and ginger. Stir in the chicken, peas, pepper and sesame seeds. Serve over lettuce leaves; sprinkle with cashews.
