Ingredients
2/3 cup chopped onion1/2 cup chopped green pepper1 tablespoon canola oil1 teaspoon minced garlic1 pound smoked sausage, cut into 1/4-inch slices1 can (16 ounces) kidney beans, rinsed and drained1 can (15-1/2 ounces) great northern beans, rinsed and drained1 cup instant brown rice1 cup vegetable broth1/4 cup packed brown sugar1/4 cup ketchup3 tablespoons corn syrup1 tablespoon Dijon mustard
Preparation
In a large skillet, saute onion and green pepper in oil until onion is crisp-tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients. Pour into a greased 13-in. x 9-in. baking dish.
Cover and bake at 350° for 15 minutes. Uncover; bake 10-15 minutes longer or until liquid is absorbed and rice is tender.
