Ingredients

1-1/2 cups grape tomatoes, halved1-1/2 cups chopped peeled cucumber1 medium ripe avocado, peeled and cubed1 small red onion, chopped2 tablespoons minced fresh cilantro1 jalapeno pepper, seeded and minced2 tablespoons lime juice1/2 teaspoon saltFISH:4 salmon fillets (6 ounces each)1 tablespoon lime juice1/2 teaspoon salt1/4 teaspoon cayenne pepper1 tablespoon butter

Preparation

In a large bowl, combine the tomatoes, cucumber, avocado, onion, cilantro, jalapeno, lime juice and salt; set aside.

Drizzle salmon with lime juice. Sprinkle with salt and cayenne pepper. In a large skillet, cook fillets in butter for 3-4 minutes on each side or until fish flakes easily with a fork. Serve with salsa.
